Crab cakes

If possible, prepare and refrigerate a couple hours ahead of time. Mix

    1 beaten egg,

    4T Mayo,

    1t Mustard,

    Dash of Tabasco,

    Black pepper,

    Old Bay to taste, and

    Celery or scallion.

Mix it all well.

    1 lb lump crab.

Mix in with your fingers

    1 Cup powederized saltines or crushed cornflakes, or bread crumbs.

Mix and make 6-8 crab cakes. Cover and refrigerate. Brown in 1T butter and 1T olive oil. Serve with

    Parsley, Lemon, and Tarter sauce
